Chicken Globe with Gratinated Stuffed Potato & Roasted Pepper Sauce

Few recipes are always close to the heart. This is my all-time favorite. This recipe was created for one of the retired army personnel, who had worked around the world in his career. In your life sometimes you met with someone who always inspired you. He is the one to whom I am always ready to prepare the food.

At my workplace, a couple was sitting and enjoying lunch. As a courtesy, I asked him how is food? He said it tastes very good, but I am looking for something different for my dinner. During the conversation, he introduced himself, and his favorite ingredient was chicken. He also said “I love to eat potatoes”.

I took the challenge to make him satisfied with my creativity and invited them for dinner.

So this was the story behind the recipe. You can also try them for whom you want to impress with your culinary skills.

  1. Red bell pepper – 1/2 no
  2. Yellow bell pepper – 1 no
  3. Green capsicum – 1/2 no
  4. Garlic cloves – 6 nos
  5. Cream – 1 cup
  6. Bread crumb – for crumbing
  7. Potato – 1 no
  8. Onion – 1 no
  9. Parmesan cheese – 1/2 cup
  10. Asparagus – 4  pi
  11. Salt – to taste
  12. Black pepper – to taste
  13. Zucchini – 50 gm
  14. Chicken minced – 100 gm
  15. Fresh rosemary leaf – 1 stem
  16. Refined oil – for frying
  17. Olive oil – 50 ml
  18. Fennel seed – ½ tea spoon


For chicken mixture

1.Heat olive oil in a pan, add garlic and asparagus saute it. Add salt and pepper. 

2. In a bowl add chicken minced, garlic, asparagus,cream and parmesan cheese. Add chopped parsley and rosemary  and egg for binding the mixture. Add salt and pepper and adjust seasoning.

3. Prepare the ball from the mixture and coat that mixture with bread crumbs. Heat oil in a pan , and golden fry the chicken ball.

For potato

4. Peel the potato, and cut half from lengthwise. Scoop out the potato from scooper to prepare the boat shape. Boil potato till al-dente. Add salt in blanching water.

5. Make a dice cut of green, red ,yellow  pepper, and zucchini. Heat a pan, add fennel seed and  gently toss the potato in olive oil. Remove the potato .

6. In the same pan heat olive oil, add chopped garlic and onion, and the vegetable mixture. Cook it for a few mins, add little cream and parmesan cheese. Stuffed that mixture in the potato. Put some parmesan cheese and gratinate the potato.

How to make sauce

7. To prepare the sauce, roast the yellow bell pepper and remove the skin and deseed. Roughly cut the pepper.

8. In a pan, heat olive oil, add crushed garlic,onion and bell pepper. Add salt and pepper. Toss it. Transfer the mixture in a bowl, allow it cool.

9. Make a smooth puree of the mixture. Strain and keep it side.

10. Take a plate, pour the sauce on the plate, keep the gratinated potato in the centre. Place the fried chicken ball on the potato, garnished with fried rosemary and serve.
