Pancakes have a long history, dated back to the times of  Romans. Pancakes are found almost in every culture. It is a thin flat cake made from batter and fried in a pan or on a griddle. The batter is usually made from eggs, flour, milk or water, oil, or melted butter. 

Pancakes may be served at any time of the day with a variety of toppings or fillings but it is typically considered breakfast food. 

Mango is considered as the king of fruits. No wonder its taste, texture, and flesh attract me always. I love mangoes, for me, summer is all about mango. I am preparing Mango pancakes for the kids and those who want to eat it throughout the year, whether it may be any season. 

I can remember, in my childhood my maternal uncle always bought me mango fruity to drink, to stop me from crying and I feel this tastes like mangoes. That’s why I have added mango fruity in the batter. I always enjoyed the taste of fruity. 

Just as a token of childhood memories and for those who love mangoes, prepare the mango pancake and enjoy!!!

Ingredients

  1. All-purpose flour ( Maida ) – 1 cup
  2. Baking powder – a pinch
  3. Ripe Mango – 1 no
  4. Egg – 1 no
  5. Butter (soft) – 1 teaspoon
  6. Milk (skimmed ) – 1 cup
  7. Sugar – 1 tablespoon
  8. Honey – 1 teaspoon
  9. Icing Sugar – to dust
  10. Mango fruity – 1/2 cup

Method

  1. Peel the mango, cut the mango in dice. Keep separate in a bowl.
  2. Use trimmed mango for grind in a food processor to prepare mango puree. 
  3. Take a bowl. Add soft butter, egg, and sugar. Beat properly.
  4. Add 1/2 cup milk and whisk.
  5. Add flour and baking powder. Beat and mix properly.
  6. Add mango puree and dice mango in a batter.
  7. To add the flavor and mango fruity in the batter and whisk properly.
  8. Heat a pan, add butter and pour a ladle of pancake batter.
  9. As the bubbles start to form on the surface of the pancake from the top side, flip and cook it from another side.
  10. Transfer the pancake to a serving plate. Garnish with icing sugar.
  11. Garnish with diced mangoes.
  12. Serve hot with maple syrup, honey, and fruits.
